Mixed rice, also known as “one-pot rice”, is a flavorful and easy-to-make dish that combines rice, vegetables, protein, and seasonings. Using a rice cooker simplifies the cooking process while ensuring perfectly cooked and aromatic rice.

Ingredients:

For the Rice Base:

  • 2 cups of jasmine or short-grain rice (rinsed and drained)
  • 2 ½ cups of water or broth (chicken or vegetable broth for extra flavor)
  • 1 tablespoon soy sauce (for a deeper taste)
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon sesame oil or vegetable oil

For the Protein (Choose One or More):

  • 150g chicken breast or thighs, diced
  • 150g shrimp, peeled and deveined
  • 100g sausage or ham, sliced
  • 100g tofu, cubed (for a vegetarian option)

For the Vegetables:

  • ½ cup carrots, diced
  • ½ cup mushrooms, sliced (shiitake, button, or any preferred type)
  • ½ cup peas (fresh or frozen)
  • ½ cup corn kernels
  • ½ an onion, finely chopped

For Extra Seasoning (Optional):

  • 1 teaspoon oyster sauce (for extra umami)
  • ½ teaspoon black pepper
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced

Instructions:

Step 1: Prepare the Ingredients

  1. Rinse the rice thoroughly until the water runs clear. Drain well.
  2. Dice the protein and vegetables into small, bite-sized pieces.
  3. If using chicken or shrimp, marinate them with a pinch of salt, black pepper, and ½ teaspoon soy sauce for extra flavor.

Step 2: Assemble in the Rice Cooker

  1. Add the rinsed rice to the rice cooker.
  2. Pour in water or broth, ensuring the liquid level is correct according to your rice cooker’s measurement.
  3. Stir in soy sauce, salt, sesame oil, and any additional seasonings.
  4. Spread the chopped vegetables and protein evenly over the rice. Do not mix yet—let them steam on top during cooking.

Step 3: Cook the Rice

  1. Close the rice cooker lid and select the “White Rice” or “Mixed Rice” setting. If your rice cooker does not have specific settings, the regular cooking function works fine.
  2. Let it cook completely (usually 25–30 minutes).
  3. Once the rice cooker beeps, let it rest for 5–10 minutes before opening the lid.

Step 4: Mix and Serve

  1. Gently fluff the rice with a rice paddle, mixing all ingredients together.
  2. Taste and adjust seasoning if needed. Add more soy sauce or sesame oil for extra flavor.
  3. Garnish with chopped green onions, sesame seeds, or fried shallots for extra aroma.
