🍖 Honey-Baked Prime Rib Recipe

Ingredients:

  • 1 (5 to 7 lbs) prime rib roast (bone-in or boneless)
  • 1/3 cup honey
  • 2 tablespoons Dijon mustard
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)
  • 1 tablespoon fresh thyme, chopped (or 1 tsp dried)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • Optional: 1 cup beef broth for pan juices

Instructions:

  1. Preheat Oven
    Preheat your oven to 450°F (230°C).
  2. Prepare the Rib Roast
    • Pat the roast dry with paper towels.
    • Let it rest at room temperature for about 1 hour to ensure even cooking.
  3. Make the Honey Glaze
    In a small bowl, mix together:

    • Honey
    • Dijon mustard
    • Minced garlic
    • Rosemary & thyme
    • Olive oil, salt, and pepper
  4. Coat the Roast
    • Rub the honey mixture generously all over the prime rib.
    • Make sure it covers every side and gets into any crevices.
  5. Roast It
    • Place the roast fat-side up on a rack in a roasting pan.
    • Roast at 450°F for 15 minutes to sear and develop a crust.
    • Reduce the oven temperature to 325°F (165°C) and continue roasting:
      • 15 minutes per pound for medium-rare
      • 18 minutes per pound for medium
  6. Check Internal Temperature
    Use a meat thermometer:

    • Medium-rare: 130°F (54°C)
    • Medium: 140°F (60°C)
  7. Rest the Roast
    • Remove from oven and loosely cover with foil.
    • Let rest for at least 20 minutes to retain juices.
  8. Optional Pan Juices
    • While the meat rests, pour beef broth into the roasting pan and scrape any browned bits.
    • Simmer and reduce slightly to make a simple au jus.
  9. Slice and Serve
    • Slice against the grain.
    • Serve with au jus, roasted vegetables, or mashed potatoes.
